Egg White takes it. The best compromise is to buy pasteurized egg whites. I make a lot of pre Prohibition cocktails and always keep a pint of egg whites handy for these. I have had both “real” egg whites from a cracked egg and egg whites from a carton from the grocery. I cannot taste any difference. The tip is to buy only 100% liquid egg whites from the store. The Pegu Club, either way, is one of the best cocktails ever.
